Taking inspiration from both Spain and Italy, Sardinian cuisine offers a unique combination of flavours. Seafood is plentiful and fresh, making it a popular accompaniment to side dishes. Bottarga is particularly famous and simply must be sampled while in Sardinia. Rather than being the main dish, this is a cured block of dried grey mullet or tuna roe which is then grated over pasta or sliced as a starter. Fregola is a particularly popular Sardinian dish, and it’s not hard to see why. While it has the appearance of giant couscous, it’s actually semolina pasta dough. The dough is hand-rolled into small balls and toasted in the oven, giving it a chewy texture similar to gnocchi. Fregola is most often paired with more traditional Italian dishes and sauces, although you’ll also find it in salads or stews. If you’ve already sampled too much pasta, then try panadas. These Sardinian pies are full of flavour and baked to perfection, plus you can find a filling that satisfies pretty much any palette. While the traditional filling is lamb, you can also find vegetarian and beef panadas, as well as plain cheese.
