Similar to a kebab, souvlakia is a pitta bread filled with char-grilled meat and salad fillings. Vegetarians can rejoice, as there is also meat-free souvlakia filled with mushrooms and halloumi, which is another Cypriot speciality. If you’ve never had halloumi before, you must indulge in the squeaky, salty cheese while on your holiday.
